Are snapping turtles good to eat?
How would I get the shell off without destroying the meat? What is a good basic recipe for turtle meat? Is turtle meat tender or chewy? I have a pressure cooker, how long do I cook a piece of turtle flesh in a pressure cooker so it is not overcooked?
Make sure your knife is strong and very sharp. Use a hook to pull out the head and stretch the neck while someone holds the turtle. Cut off the neck as close to the head as possible. Let bleed for a few minutes. It is nice to have it in running water for this step. Cut off all four feet.
The upper shell is called the Carapace, the lower shell is called the Plasticine. You will find a seam between the upper and lower shell. Cut along that seam and then the skin between to two shells. Pull the lower shell away and keep all the meat attached to the upper shell. Grasp the neck and run your knife blade down to the base of the neck. Cut the neck away from the upper shell, Pull one of the front legs out as far as you can and again run your knife blade down to where the leg is attached to the upper shell. The two back legs may be cut out together. After they are out split them . If the live is a uniform color remove the gall bladder and save the liver. It is a real delicacy.
Do NOT boil the meat. After you have washed it very well ,pat dry. Coat with flour, salt and pepper and pan fry in an iron skillet until golden brown. Add water and cover, continue to simmer for about two hours or until the meat falls away easily from the bone.

my dad used to cut them out of the shell. then they would fry them like chicken, they are good and tender if they arent really big ones.cook them about as long as you chicken.
First what you have to do is cut the head off so you won't get bit. and it will still bite you hours after the head is cut off so watch that. then take a big nail and(gross i know) put it through its rear end and nail it to a board or something so it dont crawl away and yes it will still be moving for a while after it's head is removed. Grab the feet and cut down and around them and pull the skin of the legs out toward the feet. Then along the side on the bottom out the turtle you can see a seam where the top and the bottom half's of the shell come together. put a knife in there and work it down the seam. A 4 or 5 inch knife works good cause you can use the inside of the top shell for leverage by sticking the point of the knife in it. when you get both sides done start skinning the bottom shell off, then grab a leg and start cutting the meat from the top shell.. .... i always boil mine for 15 to 20 min then take it out and fry it till it is golden brown....
