Is it easier to do 180's and 360's on a wakeskate without fins?

YES ITS EASIER WITHOUT FINS BUT ITS EASIER TO RIDE THE BOARD WITH FANS:-)

It is actually harder to do them without fins because when you land your board will slip right out from under you a lot easier than if you had fins. If you jump a lot without fins on, then I am sure that it won't become a problem to land without fins anymore.
Take em off and put small fins on, unless you have a skate w/channels in it you'll probably want something. It is a little sketchy w/o fins for sure.
